Ingredients
  

  • 3 cups organic beef broth
  • 1 Tbsp white or red wine vinegar
  • 1 Tbsp arrowroot starch
  • 1 lb 100% grass-fed ground beef
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 Tbsp minced garlic
  • 2 cups organic mushrooms baby bella, cremini, etc sliced
  • 1.5 box Jovial gluten free fusilli pasta
  • 1 can coconut milk

Instructions
 

  • In a bowl, mix together broth, vinegar and arrowroot. Whisk together and set aside.
  • In a large skillet or pot, brown the ground beef. Season with sea salt and pepper. Add onion and garlic and saute until onions are translucent. Add mushrooms and cook until tender, stirring often.
  • Over medium heat, add broth mixture and pasta. Bring to a simmer for 12 minutes or until pasta is al dente. *You may also want to cook the pasta separately if you anticipate having leftovers*
  • Stir in coconut milk and stir to combine. Remove from heat and serve immediately.

Notes

If you will have leftovers then it is best to boil the pasta separately as it gets mushy if left overnight. Then just store leftovers in separate containers (pasta in one container and sauce/meat mixture in another). Warm up on the stove in a small pot.
